CAJUN STYLE STRIP STEAKS

Serves 4 People

Combining both a dry rub and a marinade, this recipe will spice any steak.  The longer you let the steaks sit, the spicier they will be.

Ingredients

4 strip Steaks

1/4 cup paprika
3 Tbsp salt
3 Tbsp ground white pepper
3 Tbsp garlic powder
3 Tbsp onion powder
1 1/4 Tbsp dried thyme
1 1/4 Tbsp dried oregano
1 1/4 Tbsp ground black pepper
1 1/4 Tbsp cayenne pepper
3 cups neutral oil (canola or safflower)

¼ cup Worcestershire Sauce

Method

  1. Combine all dry ingredients in a large bowl and mix thoroughly.
  2. Press the steaks into the seasoning coating all sides well.
  3. Using a meat mallet or heavy skillet lightly pound each steak 6 or 7 times.
  4. Place steaks in a large non-reactive pan or bowl and pour Worcestershire Sauce over the steaks.  Add Oil to cover steaks.
  5. Cover pan and refrigerate 1 hour to overnight.  The longer you marinate the steak the spicier they will be.
  6. Remove steaks from pan, pat off excess oil with a paper towel and let sit at room temperature for 15 minutes.
  7. Grill or broil steaks to desired doneness.
    • Rare- about 4 minutes a side
    • Medium-Rare- about 6 minute a side
    • Medium- about 8 minutes a side.

Let steaks rest 5 minutes before serving.
