Broccoli, Mushroom, Bacon Quiche

Serves 4-6 People

An equal amount of Spinach can be used in place of the broccoli.

Ingredients

1 Unbaked 9″ pie shell, well chilled
1 tbl. soft butter
4 slices of  thick cut bacon
1 cup of broccoli flowerets broken into small pieces
1/2 cup of chopped mushrooms
4  Farm Fresh Eggs
1 1/2 cups Whole Milk
3/4 tsp. Salt
Pinch of Nutmeg
Pinch of Sugar
Pinch of Pepper
1/4 lb. of Swiss Cheese, grated (1 Cup)

Method

  1. Pre-heat oven to 425 F
  2. Rub butter over surface of unbaked pie shell.
  3. Fry bacon until crisp: crumble into small pieces.
  4. Cut broccoli and mushrooms into small pieces.
  5. Combine eggs, milk, salt, nutmeg, sugar and pepper; with egg beater, beat just long enough to mix thoroughly.
  6. Sprinkle bacon, broccoli, mushrooms, and cheese into pie shell; pour in milk mixture.
  7. Bake 15 minutes. Reduce oven temperature to 300 F; bake 40 minutes longer or until knife inserted in center of quiche comes out clean.
